Life-changing Broccoli

This post could change your life.

I have had major broccoli frustration.
Until now.
Don't get me wrong.
I like it.
Okay, I don't hate it.
But I don't like it raw.
or steamed.

and I always overcook it when I saute it.
and it goes from uncooked + too crunchy
to overcooked + too soggy
in about 3 seconds.
neither of which work for me.

So my friend Julie told me about
roasted broccoli.
in the oven.
and I mean it when I say that it's perfect.
absolutely perfect.
every time.

you just throw it in there,
and forget about it.
and out it comes.

beautiful broccoli.

here's the recipe:
broccoli spears
olive oil
lemon pepper
or garlic salt
or both

1. Wash the broccoli and chop it up.
2. Toss it in a little olive oil
3. Put it in a roasting pan and sprinkle with a little lemon pepper or garlic salt or both.
4. Put it in the oven at 425 for 25 minutes.
and you are done!

I could eat this every night of my life.
you can get fancy, too, by adding feta or grated parmesan or roasted almonds...
but you don't really need to because it's so good by itself.

  1. You've just gotta love a broccoli revelation! LOL! Mine was japanese restaurant ginger dressing. A little broccoli, a little dressing, cover and microwave. The raw veggies setting on my microwave does it up to perfection! Now I'm gonna have to try your way too!

  2. Hm. I´ll have to try that. Broccoli is my favorite veggie. And apparently it´s like the third most healthy thing in the world you can eat. (On a list where the first place went to some rare rain-forrest-green that can´t be found in any shop)

  5. How brown is it supposed to turn out? I think I may have overcooked mine (I took it out at 22 minutes), but it was really yummy!! Katie asked for seconds. And thirds. I cook Kale in a similar manner, except I broil it until it is brown and crispy (it takes a lot of close watching, though, to make sure it doesn't burn). It is really yummy with sea salt and olive oil. We call them Kale chips! They are crunchy and salty and oh so satisfying!
